Ingredients

  • 1 c Israeli couscous
  • 1 1/4 c water
  • 15 oz black beans rinsed
  • 1 ear of corn, cooked and cut off the cob
  • 1/2 c roasted red peppers chopped
  • 1/2 small red onion finely diced

For the dressing

  • 1/2 c olive oil
  • 1/4 c fresh cilantro, chopped
  • juice from 1 lime
  • 1 tsp ground cumin
  • 1/8 tsp sea salt

Instructions

Bring water to a rolling boil. Add couscous and turn to low. Let simmer until all water is absorbed. Transfer to a container and chill in the refrigerator.

Make the dressing by placing all ingredients into a blender and mixing on high until smooth (about a minute).

Once the couscous has chilled, mix together couscous, black beans, sweet corn, roasted red peppers, and red onion in a large bowl. Pour dressing over couscous and mix.
