Ingredients
- 2 wraps
- 2 c spinach
- 1 can chickpeas drained and rinsed
- 1/3 c mayonnaise
- 1 celery rib diced
- 1/2 c grapes halved
- 1/4 c walnuts chopped
- 1/4 onion diced
- 1 tbsp hemp seeds Optional
- juice of 1 lemon
- 1/2 tsp salt
- 1/4 tsp pepper

Pat your chickpeas dry, making sure no excess moisture remains from washing them.

Combine the chickpeas, mayonnaise, celery, grapes, walnuts, onion, hemp (if using), lemon juice, salt, and pepper in a large bowl and mix until everything is well combined.

Lay out a wrap and layer on half of the spinach and half of the chickpea salad. Reserve the remaining wrap, salad, and spinach to assemble at your next meal.
