Vegan Chili

Ingredients

The Main Stuff

  • At least 1 clove garlic
  • Half a onion or so if you have it
  • Tomato paste (2 tbs?)
  • 14 oz(?) can of tomatoes (I like crushed but whole or chopped is gucci)
  • Quinoa 1/4 cup dry? maybe 1/3? Don't need a lot
  • Normal sized can of beans (black/kidney beans usually work best but chickpeas do fine)

Veggies (fresh is dope, frozen works)

  • Carrots
  • 1 Zucchini sliced/diced Optional
  • 2 or 3 handfuls of spinach
  • 1 Bell pepper chopped
  • Some Corn Optional
  • More Tomatoes Optional
  • Whatever else you want Optional

Seasoning

  • Chili flakes / chili powder
  • Cumin
  • Paprika
  • Nooch
  • Italian seasoning because you have way too much of it
  • Veggie stock paste Optional

Toppings

  • Scallions sliced
  • Cheese Optional
  • Tears from a long day required

Instructions

Grab a large pot and toss it on the stove. Turn to medium or so. Chop up garlic, onion, any hard veggies (basically anything that takes longer than 2 minutes to cook).

Drizzle a lil olive oil in your pot, add garlic and onion let em get happy. Add the rest of your veggies, if using frozen I usually add them now too. If using chickpeas for your beans add them now.

Add most of the seasoning now too, salt, pepper, chili stuff, cumin, paprika, etc. Let all the goods sweat down with the seasoning until they smell good.

Add the can of tomatoes, if using whole mash em down a bit in the pot. Mix everything today and either add water or veggie stock until it looks kind of like a soup. Add any beans, any remaining veggies and tomato paste in here now too. Let it simmer away for at least 5 minutes, taste and add more seasoning, tomato paste or veggie stock as desired. You're going to be eating this, what are you in the mood for?

Sprinkle in your quinoa and let everything simmer together for 10 minutes maybe, however long it takes for it look like the quinoa has split and is done. This gonna cook down and absorb a lot of the liquid, so depending on how thick you want your chili, add more liquid or more quinoa to adjust.

Taste that bad boi one last time, add whatever you want, just start eating it out of the pot you're probably starving.

Eventually become an adult and serve your chili into a bowl, and top with whatever you'd like. Eat & Repeat.
