Ingredients
For the scramble
- Half a container of firm or extra firm tofu
- 1 small bell pepper (or big w/e) chopped
- 2 or 3 mushrooms sliced
- 2 handfuls of spinach
- 1/4 1/2 Onion chopped Optional
- garlic clove squashed n chopped
- Whatever seasonings you want: chili powder, cumin, parika, nooch, soy sauce, hot sauce etc
Extras
- Slice of bread toasted
- Avocado or guac
- Scallions
Instructions
Heat up a pan on medium or so heat, add a lil drizzle of olive oil. Chop up the garlic, onion, pepper and mushrooms and add them to the pan.
Let the veggies cook down to however you like them. Season with salt, pepper & others.
Take out your package of tofu, cut it into 1/4 inch or so slices, mash with a fork and add to the pan. You can also just grab it in your hands and squish it into the pan.. I however do not enjoy tofu all over my hands thanks..
At this point if you haven't already think about starting some toast.
Add nooch and more seasoning, usually I add a lil hot sauce and a tiny bit of soy sauce here. Toss in the spinach and mix everything together. Cook on medium, stirring occasionally until most of the water has cooked out of the tofu and it looks appetizing.
Check on your toast to make sure you didn't burn it too bad.
Slice your toast, toss it on a plate and pile your tofu scramble on top of it. Top with avocado, scallions, whatever you'd like and eat!
