Ingredients
- 2 cloves garlic smashed and chopped
- 1/2 medium onion chopped
- 5 medium carrots chopped
- 2 c mushrooms sliced
- 1 bag baby spinach
- 1 c green/brown lentils
- 3 c water
- 4 tsp veggie stock paste
- 1/2 tsp granulated ginger
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1/4 tsp paprika
- 1/4 tsp dried thyme
- 1/2 tsp of flour
- 1/2 tsp of butter
Instructions
Heat a large saucepan on medium with a bit of olive oi. The one with sides.
Add garlic, onion, carrot and mushrooms to the pan. Add all of the seasoning and s/p. Sweat until mushrooms and onions are good and soft.
Add lentils, water and veggie paste. Bring to a boil, turn down the heat and cover. Let simmer for 15-20 minutes or as long as it takes for most (not all) of the liquid to absorb and lentils to be done.
Idk if this is necessary or not, but create a lil roux with the flour and butter. I'm sure you could also use cornstarch but I didn't have any. I just used the microwave to heat these, stirring every 20/30 seconds. 1 1/2 total. Add this mixture to the pan and stir.
Cover and let simmer for another 5 minutes. Add bag of spinach, let wilt a bit and then stir.
Put a little in a bowl and let sit until cool enough to eat. If too watery let cook more, if not seasoned enough add more duh. Done.
