Ingredients
- 2 c water
- 3 c veg stock
- 1 lb whatever pasta
- 2 tbsp butter
- 1 package mushrooms sliced
- 2 large bell pepper sliced
- 2 tbsp all-purpose flour
- 1 tbsp Cajun seasoning
- 1 tsp salt
- 1/2 tsp pepper (or more)
- 1 1/2 c milk divided
- 1/4 c chopped fresh flat-leaf parsley Optional
- topping cheese (cheddar, parm, motz, whatever) Optional
Instructions

Combine water, broth and 1 cup milk in a large pot, bring to boil and add pasta. If using unsalted veg stock add salt.

Melt butter in a large skillet over medium-high heat. Add mushrooms and pepper to pan; sauté until moisture evaporates and veg are desired doneness.

Add flour, Cajun seasoning, salt & pepper to pan; sauté a bit more to cook the flour then stir in 1/2 cup milk; cook and stir until flour bits are combined.

Remove from heat. Add to pasta mixture and toss. Serve and top with parsley
