Adjusted measurements for standard box of pasta and no half and half

Ingredients

  • 2 c water
  • 3 c veg stock
  • 1 lb whatever pasta
  • 2 tbsp butter
  • 1 package mushrooms sliced
  • 2 large bell pepper sliced
  • 2 tbsp all-purpose flour
  • 1 tbsp Cajun seasoning
  • 1 tsp salt
  • 1/2 tsp pepper (or more)
  • 1 1/2 c milk divided
  • 1/4 c chopped fresh flat-leaf parsley Optional
  • topping cheese (cheddar, parm, motz, whatever) Optional

Instructions

Combine water, broth and 1 cup milk in a large pot, bring to boil and add pasta. If using unsalted veg stock add salt.

Melt butter in a large skillet over medium-high heat. Add mushrooms and pepper to pan; sauté until moisture evaporates and veg are desired doneness.

Add flour, Cajun seasoning, salt & pepper to pan; sauté a bit more to cook the flour then stir in 1/2 cup milk; cook and stir until flour bits are combined.

Remove from heat. Add to pasta mixture and toss. Serve and top with parsley
