8 large enchiladas
Oven: 375ºF

Ingredients

Filling

  • 1 medium yellow onion diced
  • 2 bell peppers diced
  • 2 cloves garlic diced
  • 1 16 oz can black beans drained and rinsed
  • Salt, pepper, chipotle seasoning, onion powder, cumin etc to taste

Assembly

  • 8 pack of fajita size flour tortillas
  • 1 can green enchilada sauce
  • 1/4 c (ish) your favorite medium salsa
  • 1 c cheese cheddar, jack, similar
  • 1 -2 green onions to serve Optional

    Instructions

    Heat a large pan to medium. Add a bit of oil and then the onion, once lightly cooked add the garlic and the pepper. Sauté until peppers are mostly softened.

    Do the beans

    Assemble

    Pour green sauce around. Top with salsa and cheese

    Bake until cheese is happy

    Top with green onion and serve
