
This New Mexican classic is just the thing when you want Mexican food but you live in 'Merica.
Ingredients
- 1 1/4 lb Ground beef 85% lean
- 2 Jalapeños Halved
- 1 Anaheim Chile Halved
- 1/2 Onion Sliced into 1/2” rounds
- 6 cloves of garlic diced
- salt and pepper
- 4 Hamburger buns
- 1 slice cheddar cheese Optional
Instructions
For the Chiles
With the oven set to broil on high, arrange the onions and chiles skin side up on a baking tray. Toast until brown, then flip, add garlic, and toast until brown again.
Dice the chiles, onions, and garlic. Add a pinch of salt and pepper. Set aside all but 1/4 cup of the chile mixture.
Finely chop or purée the remaining 1/4 cup chile mixture.
For the burgers
In a medium bowl, knead the ground beef and chile purée. Add salt and pepper.
Form into 4 patties, about 3/4” thick.
Grill for 5 minutes per side.
Add cheese if desired at the 4th minute on the second side, cover for final 60 seconds.
Serve
Serve hot on toasted buns. Heap extra chopped chiles on top. Add condiments to taste.
