Southwest Vegetable Paella

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 1 medium green pepper cut into 1" pieces
  • 1 green chilli chopped
  • 2 cloves garlic minced
  • 200 g long-grain white rice uncooked
  • 400 ml vegetable stock
  • 1 x 14 oz can diced tomatoes
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1 x 14 oz can black beans rinsed & drained
  • 1 x 7oz can whole kernel corn drained

Instructions

In a large skillet, heat olive oil and cook onion, green pepper, chilli and garlic till tender (4-5 mins).

Add rice, vegetable stock, tomatoes, & spices.

Bring to a boil, reduce heat to low, cover, and simmer 15 minutes.

Stir in black beans and corn, cover, and cook an additional 5 mins.
