Salsa

Serves 2+

Ingredients

  • 2 medium-sized tomatoes chopped
  • 1 medium sized onion chopped
  • 1 green chilli chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander (or use fresh, see below)
  • 1/4 tsp ground black pepper or cayenne pepper or paprika or red chilli powder
  • salt as required
  • 2 tsp lemon juice or add as required
  • 2 tbsp chopped coriander leaves chopped

Instructions

Blitz in a food processor into a fine, slightly-chunky consistency. I recommend pulsing bit by bit to make sure you don’t over process.
