Brussels sprouts with coriander seed

Ingredients

  • 250 g sprouts
  • 1 tbsp coriander seeds
  • 30 g butter

Peel the sprouts and cut each in half. Keep covered in the fridge.

Crush the coriander seed with a pestle and mortar until roughly crushed. Melt the butter and stir in the coriander. Leave to infuse, off the heat, while you get on with the rest of the preparations.

To cook

Shortly before serving, steam the sprouts for 3-4 minutes until just tender.

Heat the butter and coriander and mix in the sprouts.
