Strawberry Kale Salad

Ingredients

  • 1/2 c raw unsalted pumpkin seeds
  • 2 tsp maple syrup
  • 1 tsp garam masala
  • 6 c baby kale
  • 2 c strawberries
  • 1/2 c extra virgin olive oil
  • 1/4 c balsamic vinegar
  • 1 tsp maple syrup
  • 1 tbsp dijon mustard
  • 1 tbsp fresh mint

In a small saucepan over medium heat, toast pumpkin seeds with maple syrup and gararm masala for about 7 minutes or until coated and fragrant. Set aside to cool on a plate.

In a large bowl, combine kale and strawberries. Add cooled pumpkin seeds.

Make the dressing by whisking together oil, vinegar, mustard, syrup, and mint in a small bowl.

Dress and toss the salad. Serve immediately.
