Black Bean Garden Burgers

Ingredients

  • 1 c rolled oats food processesed into a coarse powder
  • 1 yellow onion
  • 1/2 c carrots
  • 4 garlic cloves
  • 15 oz black beans
  • 1/2 c fresh parsley chopped
  • 1/2 c toasted sunflower seeds
  • 1/4 c sun-dried tomatoes diced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 3/4 tsp sea salt
  • 1/4 tsp black pepper
  • avocado Optional
  • tomato Optional
  • c sprouts or microgreens Optional
  • burger buns Optional
  • 1 egg

Instructions

Sweat the onion and carrots with some oil. Add garlic, smoked paprika, cumin, salt, black pepper. Cook until fragrant.

In a food processor, combine the black beans, oats, and onion mixture. Add the parsley, sun dried tomatoes, sunflower seeds, and egg. Pulse until the mixture just holds together.

Form the mixture into patties and set aside.

Heat oil in skillet on medium heat. Cook patties four at a time, about 5 minutes per side.

Serve on buns with avocado, tomato, and sprouts.
