Green Beans With Shallots And Almonds

Ingredients

  • 2 lbs. Green beans trimmed
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • 2 Shallots medium-size, small dice
  • 1/4 tsp Pepper fresh ground
  • 1/2 c Almonds sliced, toasted

Instructions

Bring a large pot of salted water to a boil; blanch green beans for 2 minutes then remove and keep warm.

Warm the oil and butter in a sauté pan until the butter melts. Add the shallots and cook on low-medium heat for 5-10 minutes or until lightly browned; season shallots with pepper and additional salt if necessary.

Add green beans to the pan and toss with shallots to coat. Fold in the almonds and serve.
