Green Beans With Shallots And Almonds
SteveChef's Note: Green beans can be blanched a day in advance to save time. On the day of serving, make the shallot almond mixture and toss with the green beans. Cover with foil and hold over low heat until beans are thoroughly warmed through.

Ingredients
- 2 lbs. Green beans trimmed
- 2 tbsp Olive oil
- 2 tbsp Butter
- 2 Shallots medium-size, small dice
- 1/4 tsp Pepper fresh ground
- 1/2 c Almonds sliced, toasted

Bring a large pot of salted water to a boil; blanch green beans for 2 minutes then remove and keep warm.

Warm the oil and butter in a sauté pan until the butter melts. Add the shallots and cook on low-medium heat for 5-10 minutes or until lightly browned; season shallots with pepper and additional salt if necessary.

Add green beans to the pan and toss with shallots to coat. Fold in the almonds and serve.
