Pumpkin Chocolate Chip Cookies

A good way to flatten cookies is to place a sheet of wax paper on the cookie then press down with the bottom of a glass.

The dough can be made ahead of time and frozen.

Ingredients

  • 60 g quick oats
  • 70 g quick oats
  • 50 g sugar
  • 3 tbsp mini chocolate chips
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • 1/8 tsp ground allspice
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 80 g canned pumpkin
  • 2 tbsp milk of choice
  • 1 1/2 tbsp oil or nut butter of choice
  • 1/2 tsp vanilla extract

Instructions

Combine all dry ingredients in a large mixing bowl.

Add wet ingredients and stir to form a batter. Add a little extra milk if needed.

Form balls, then place on a cookie tray and flatten a little.

Bake at 350 for 10 minutes, let cool 10 minutes.
