Ingredients
For the Veggies
- 1 1/2 lb fresh or frozen cauliflower florets
- 1 pint grape tomatoes sliced in half length wise
- 15 oz canned chickpeas rinsed and drained
For the Seasoning Mix:
- 1/4 c balsamic vinegar
- 2 tbsp extra virgin olive oil
- 1 tbsp sumac
- 1 tbsp dry oregano
- 1 tsp salt
Garnish:
- Fresh chopped cilantro or parsley Optional
Instructions

Preheat the oven to 400F. Line a large baking sheet with parchment paper, and arrange the cauliflower, tomatoes, and chickpeas evenly on the sheet.

Whisk the seasoning mix ingredients in a bowl and pour it over the vegetables and chickpeas. Mix gently to evenly distribute the seasoning

Bake for 30 minutes or until the cauliflower is done. Garnish with chopped cilantro or parsley (optional).
