Pan-Seared Salmon with Roasted Potatoes and Green Beans

Ingredients

  • 1 lb salmon
  • 2 lb red potatoes cut into bite-sized pieces
  • 1/2 lb string beans washed, ends removed
  • 1 head of garlic
  • 1 lemon quartered lengthwise
  • olive oil
  • sea salt
  • freshly ground black pepper

Preparation: Preheat the oven to 425 F. Place a skillet over medium-high heat.

Roast the potatoes: Peel the garlic. Wash, dry, and quarter the potatoes. Place the potatoes and garlic in a roasting pan and toss using hands with olive oil to coat along with salt and freshly ground pepper. Place the pan in a 425 F oven for 30 minutes, occasionally stirring the potatoes.

Cook the beans: Sauté the beans in the skillet with some olive oil and sea salt. When done, remove from the pan and cover to keep warm, returning the pan to the heat.

Cook the fish: Cut the fish into four equal-sized fillets. Sprinkle each with salt and freshly ground black pepper and drizzle with olive oil. Drizzle a little olive oil into the pan and add the fillets skin side up (skinless side against the pan). Cook, flipping once, until done, about 5 minutes per side.

Plate the dish: Place a salmon fillet on each plate, accompanied by a heap of roasted potatoes, some sautéed green beans, and a lemon wedge. Serve immediately.
