In this burger-style take on the popular Vietnamese sandwich, we’re tossing crisp radishes and carrots together (with a touch of vinegar and sugar) to make a tangy slaw that tops juicy beef patties—all layered together with our creamy, spicy mayo on a toasted baguette.

  • 10 oz Ground Beef
  • 2 Small Baguettes
  • 6 oz Carrots
  • 3 oz Radishes
  • 1/2 lb Broccoli
  • 2 tbsp Mayonnaise
  • 1 tbsp Rice Vinegar
  • 1 tbsp Sambal Oelek
  • 1 tbsp Sugar
  • 1 tbsp Sesame Oil
  • 2 tsp Vadouvan Curry Powder

Prepare & roast the broccoli:

Place an oven rack in the center of the oven, then preheat to 450°F. Wash and dry the fresh produce. Line a sheet pan with foil. Cut off and discard the bottom ½ inch of the broccoli stem; cut the broccoli into small florets. Transfer to the foil. Drizzle with the sesame oil and season with salt and pepper. Toss to coat; arrange in an even layer on one side of the sheet pan. Roast 10 minutes. Leaving the oven on, remove from the oven.

Marinate the vegetables & make the sambal mayo:

While the broccoli roasts, in a medium bowl, combine the sugar and vinegar. Peel the carrots and grate on the large side of a box grater. Halve the radishes lengthwise, then thinly slice crosswise. Transfer the prepared vegetables to the bowl of sugar-vinegar mixture; stir until the sugar dissolves. Set aside to marinate, stirring occasionally, at least 10 minutes. Taste, then season with salt and pepper if desired. In a separate bowl, combine the mayonnaise and as much of the sambal oelek as you’d like, depending on how spicy you’d like the dish to be. Season with salt and pepper.

Form & cook the patties:

While the vegetables marinate, in a medium bowl, combine the beef and up to half the curry powder (you will have extra). Season with salt and pepper; gently mix to combine. Form the mixture into four equal-sized oval patties. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot. Add the patties and cook 3 to 4 minutes per side (flipping carefully, as the oil may splatter), or until browned and cooked through. Turn off the heat.

Finish & serve your dish:

While the patties cook, halve the baguettes. Carefully place cut side up on the other side of the sheet pan of roasted broccoli. Drizzle with olive oil and season with salt and pepper. Return to the oven and bake 4 to 6 minutes, or until the baguettes are lightly browned and the broccoli is tender when pierced with a fork. Remove from the oven. Assemble the burgers using the baked baguettes, sambal mayo, cooked patties, and marinated vegetables (discarding any liquid). Serve the burgers with the roasted broccoli on the side. Enjoy!
