White Bean Stew

- 1/4 c extra virgin olive oil
- 4 garlic cloves
- 1/4 tsp red pepper flakes Optional
- 14 1/2 oz canned diced tomatoes
- 4 c vegetable broth
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 12 oz dried penne or shell pasta
- 15 oz canned white beans
- 1 kale
- shaved parmesan
- crusty bread
Instructions

Heat olive oil in a large pot over medium heat. Add garlic and red pepper flakes and cook until fragrant, about 2 minutes.

Add diced tomatoes with juice, season with salt and pepper, and cook about 2 more minutes.

Add vegetable broth and pasta. Bring to a simmer and cook until pasta is tender, about 5-8 minutes.

Add white beans and kale and stir to wilt. Serve with bread and garnish with parmesan cheese.
