Store leftover burgers sealed in the fridge for 1 day or freeze and eat within a few weeks. To reheat, warm in 400º oven for 12 minutes or until warmed through.
Ingredients
- 1 medium sweet potato
- 16 oz white beans (cannellini)
- 1/2 c white onion
- tbsp tahini
- 3/4 tsp apple cider vinegar
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 black pepper
- 3/10 c flour
- 1 tbsp coconut or canola oil
- panko breadcrumbs
- avocado
- tomato
- burger buns
Instructions
Bake sweet potato in 400º oven for 40-60 minutes or until tender.
Rinse beans with hot water. Add potato and beans to a large mixing bowl, and mash well. Fold in the onion and continue mashing.
Add remaining ingredients to the bowl and mash until thickened.
Chill mixture in fridge for 30 minues to make forming patties easier.
Heat oven to 400º.
Heat a skillet over medium-high heat and add coconut or canola oil.
Form burger mixture into patties, coat in panko crumbs, and place in hot skillet. Cook 1-3 minutes on each side until brown, longer if mixture was chilled.
Place the browned patties on a baking sheet and bake for 10-15 minutes, unitl cooked through.
Slice toppings and serve warm on toasted bun.
