Ingredients

  • 2 tbsp melted coconut oil
  • 3 ripe pears or apples
  • 2 c unsweetened plain almond milk
  • 1/4 c maple syrup
  • 1 tbsp vanilla extract
  • 2 c rolled oats
  • 3/4 c pecans or other nuts
  • 1/2 c raisins or other dried fruits
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/4 c sea salt

Grease a 13x19 inch baking dish with a little coconut oil. Evenly distribute pears in bottom of the pan.

In a medium bowl, whisk together the almond milk, maple syrup, vanilla, and melted oil.

In a large bowl, stir together the oats, nuts, dried fruit, cinnamon, ginger, nutmeg, and salt.

Add the almond milk mixture and combine. Spread evenly over the pears.

Bake for 30-40 minutes or until the center is set.
