Red Lentil Soup

Ingredients

  • 1 tbsp extra virgin olive oil
  • 2 garlic cloves
  • 1 shallot
  • 2 carrots
  • 1 celery stalk
  • 1 medium sweet potato
  • 180 g red lentils
  • 1 vegetable broth
  • 1/2 tsp paprika
  • bay leaf
  • sea salt
  • freshly ground black pepper
  • crusty bread Optional

Instructions

Heat oil over medium heat in a large pot. Add garlic and shallot. Cook until fragrant and tender, about 3-5 minutes.

Add carrots, celery, and sweet potato. Season with salt and pepper. Combine well and cook about 5 minutes.

Stir in red lentils, parpirka, broth, and bay leaf. Bring to a boil. Reduce heat, cover, and let cook about 25 minutes or until lentils have thickened.

Season with salt and pepper and serve.
