Quinoa

- 1 c uncooked quinoa
 - olive oil Optional
 - 2 c water or broth
 - 1/2 tsp salt
 
Instructions

Heat a drizzle of olive oil in a saucepan over medium-high heat and add the quinoa. Cook, stirring, for about 1 minute to toast.

Stir in the water or broth and salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.

Remove from heat and let stand 5 minutes before fluffing with a fork.
