Sort and rinse your posole. Soak from 6 to 10 hours in cold water. Strain.

In a large pot, add the soaked posole (about 2 cups), 3 quarts water, and a roughly chopped onion. Bring to a hard boil for about 5 minutes, then reduce heat to a gentle simmer for about 4 hours. The posole will flower, like popcorn, when it's finished.

Strain and use in any recipe calling for cooked posole. Posole replaces canned hominy with none of the rubberiness or gummy texture. Freeze any extra posole.
