Morning Glory Muffins

Ingredients
- 500 g AP flour
 - 30 g baking sofa
 - 1 tsp cardamom
 - 2 tsp cinnamon
 - 1/2 tsp ground ginger
 - 2 tsp salt
 - 6 large eggs
 - 500 g honey
 - 2 tsp vanilla extract
 - 100 ml canola oil
 - 200 g walnuts
 - 4 apples
 - 400 g carrots
 - 80 g dried shredded coconut
 - 140 g raisins
 
Instructions

In a large bowl, whisk together the flour, baking soda, cardamom, cinnamon, ginger, and salt.

In a small bowl, beat together the eggs, honey, vanilla, and canola.

Add the wet ingredients to the dry ingredients and gently combine with a spatula.

Stir in the walnuts, apple, carrot, coconut, and raisin. Spoon into greased muffin tins and bake in a 350º oven for 20 minutes.
