Thought roasting would be sufficient to remove water, but roasted eggplant was still very moist. Need to salt next time.

This would be great with an actual grill instead of broiling

Roast garlic as well?

Ingredients

  • 2 eggplants
  • garlic
  • tahini
  • lemon
  • olive oil
  • cumin
  • coriander
  • salt

Instructions

Set broiler to high. Slice each eggplant lengthwise, drizzle with olive oil, and place face up on a pan. Set the pan on the top rack close under broiler until a slight char is achieved. Remove eggplants from broiler and let cool.

Once cool enough to handle, scoop the flesh of the eggplant into a bowl and discard the skins. Season with garlic, tahini, olive oil, cumin, and coriander. Squeeze the juice out of the lemon and add as much as needed. Salt to taste. Stir to combine.

Serve with warmed pita bread.
