Gnocchi

Ingredients

  • 1 lb. Ricotta cheese
  • 2 whole eggs
  • 1 c grated cheese
  • 1 c cooked spinach or chard chopped well and drained
  • Salt and pepper
  • Start with about 2 cups all-purpose flour

In a bowl mix both cheeses with spinach, salt and pepper . Add eggs and mix well. Slowly mix in flour until you can turn a slightly sticky dough on to a board and gently knead to form smooth dough, Roll, dowel and cut. Cook about 3 1/2 minutes in boiling salted water.
