Ingredients
- 2 tbsp extra-virgin olive oil
- 1 large onion chopped
- 3 cloves garlic minced
- 1 1/2 tsp dried rosemary leaves
- 30 oz cooked cannellini, Great Northern, navy, or other white beans drained if canned
- 2 tbsp white wine vinegar
- 1/8 tsp cayenne pepper Optional
- Salt and pepper
- Fresh rosemary for garnish

Heat oil in skillet over medium head. Add onion and saute until soft but not brown, about 6 minutes. Lower heat slightly and add garlic and rosemary, sauteing until fragrant, another 2 to 3 minutes. Remove from heat

Scrape onion mixture into food processor, and add beans, vinegar, cayenne if using, and salt and pepper to taste. Mix until smooth.

Oil the bottom and sides of a shallow 1-quart gratin dish. Transfer bean mixture to oiled idshes, smoothing the top with a spoon. Drizzle a little oil over the top. Bake, uncovered, about 25 minutes. Garnish with rosemary sprigs.
