Peanut Butter Cocoa Bliss Bites

You can dust the bites in powdered sugar, coconut, almond flour, or ground nuts for more flavor and texture.

Ingredients

  • 1/2 c raw unsalted pumpkin seeds
  • 3/4 c rolled oats
  • 3/10 c hemp seeds
  • 1/4 c raw unsalted sunflower seeds
  • 1 1/2 c pitted Medjool dates
  • 3 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1/2 c smooth peanut butter
  • 2 tbsp coconut flakes

Instructions

In a food processor, combine pumpkin seeds, oats, hemp seeds, and sunflower seeds until fine and crumbly, about 1 minute. Add the dates and process for 1 more minute.

Add cocoa powder, vanilla, peanut butter, and coconut. Process mixture unitl the mixture forms a ball, about 3 minutes.

Take small spoonfulls (about 1T) and roll into 26 bite-sized balls.
