Ingredients
- 1/8 c olive oil
- 1/4 c balsamic vinager
- 3 tbsp fresh basil chopped
- 1/4 c red onion chopped
- 1 1/2 c mozzarella cheese cubed
- 2 large heirloom tomatoes diced
- chicken breasts
- breadcrumbs
- 2 eggs
Instructions
For the Panzanella

Combine basil, onion, cheese, and tomatoes in a large bowl. Drizzle with olive oil and balsamic vinegar. Let rest in refrigerator.
For the Chicken

Clean excess fat off the chicken.

Coat the chicken in egg, then breadcrumbs.

Cook the chicken in a pan with oil until golden brown.
