Ingredients

  • 2 c rolled oats
  • 1 c almond or other GF flour
  • 1/4 c chia seeds
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 c ripe banana
  • 1/2 c cashew or other seed butter
  • 1/4 c coconut oil
  • 1 tsp vanilla extract
  • 3/4 c dates
  • 1/2 c unsweetened shredded coconut
  • 1/2 c raw cashews

Line 2 baking sheets with parchment paper.

In a large mixing bowl, combine oats, flour, chia seeds, baking soda, cinnamon, and salt.

In another bowl, combine banana, cashew butter, oil, and vanilla.

Make a well in the center of the oat mixture and pour banana mixture in. Stir to combine. Fold in dates, coconut, and cashews.

Using a 0.3c measuring cup, drop small mounds of douch onto baking sheets, leaving space between the mounds. Gently press on the tops to flatten slightly.

Bake for 20 minutes or until tops are golden brown and the centers of the cookies are set.
