Mint Chocolate Chip Cookies

Ingredients

  • 1 butter
  • 1 1/2 c sugar
  • 2 large eggs
  • 1 egg yolk
  • 1 tsp peppermint extract
  • 3 1/4 c all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1/2 tsp kosher salt
  • 12 oz dark chocolate chips
  • 10 green food coloring Optional

Instructions

Line baking sheets with parchment paper or silpat.

In a large bowl, beat butter and sugar together, scrape the sides and bottom of the bowl, and beat on medium until light and fluffy, about 2 minutes.

Add eggs, yolk, peppermint extract, and food coloring (if using).

In a separate bowl, combine flour, baking powder, baking soda, cream of tartar, and salt.

Add dry ingredients to the wet ingredients and combine until flour is not quite incorporated.

Cover dough and refrigerate for 1 hour.

Using 0.25c measuring cup, shape into egg-shaped balls. Place on lined baking sheets the tall way

Bake at 350º for 8-10 minutes or until barely starting to brown on the edges.

Let cool 5 minutes on the pan then move to a cooling rack.
