Ingredients

Coconut Crust

  • 5 c shredded sweetened coconut
  • 1 1/2 oz butter
  • Pinch of salt
  • Dash of vanilla

Margarita Curd

  • 6 eggs
  • 1 1/2 c of sugar
  • 4 oz butter
  • 3/4 c lime juice
  • Zest of two limes
  • Pinch of salt
  • 3 tbsp tequila
  • *optional 2 drops of green food coloring

Tequila Lime Whipped Cream

  • 1 pint heavy cream
  • 1/4 -1/2 cup powdered sugar (depends how sweet you like your whipped cream)
  • 1 tbsp tequila
  • Zest of 1 lime

Coconut Crust

Combine coconut, butter, salt, and vanilla in a food processor until they start to stick together and then press into a tart pan. Bake at 300 F for about 20 minutes

Margarita Curd

Combine eggs and sugar in a double boiler, and then add the butter, stir until butter and sugar have dissolved. Add lime juice, zest, and salt and stir until mixture has thickened. Remove from heat and stir in tequila. Strain into the pre-baked tart shell, and then bake at 300 F for about 15 minutes. Once set, chill.

Tequila Lime Whipped Cream

Combine in a mixing bowl and beat until whipped cream forms.
