Mac and Cheese with Butternut Squash

Ingredients

  • 2 c whole wheat pasta
  • 2 c chopped butternut squash
  • 1/2 c shredded sharp cheddar
  • salt and pepper

Instructions

While the pasta is cooking, microwave the butternut squash with 2T water for 6-10 minutes, until soft.

Puree squash in a blender.

Strain pasta when cooked, then put back into the pot. Add the pureed squash and cheddar cheese.

Put in a baking dish, season with salt and pepper, and bake at 375 for 20-25 minutes,
