Ingredients
For the Dates
- 1/2 lb dates, rough chopped
- 1 1/2 c water
- A dash of lemon juice if you have it
For the Crumble
- 1 1/2 c flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 c salted butter, room temperature
- 1 c brown sugar
- 1 1/2 c oatmeal
Instructions
For the Dates
Cook the dates, water, and lemon juice on the stove top until a jammy consistency. Watch closely and stir, as they can burn quickly. Set aside and prepare the crumble.
For the Crumble
Rub together the butter and flour, then mix in the rest of the dry ingredients.
Spread 1/3 to 1/2 of the crumble into the bottom of a 9x13 pan and press down, gently spread the date mixture over top. Top with remaining crumble mixture.
Bake at 325 degrees for 30-35 minutes.
Notes
You could use unsalted butter, but add a small amount of salt to the crumble, but in my mom's family, they would only use salted butter.
I used rolled oats, but not quick oats. I suspect granny would have used quick oats.
I used the 9x13 pan, but the bars were quite thin, I would like to try again and do a smaller pan for thicker bars.
I chucked ground flax in mine because it was staring at me from the shelf, and it went pretty well.
