- 60 g unsalted butter
- 31 g AP flour
- 480 ml whole milk warmed
- 2 c sharp cheddar cheese grated
- 1 freshly ground black pepper

In a small saucepan, melt the butter over medium heat. Sprinkle flour over the top, stirring constantly to form a thick paste, about 1-2 minutes.

Whisking constantly, add the warm milk in a steady stream. Continue constantly until the mixture thickens, about 5 minutes. It should be thick but still pourable.

Add the cheese, whisking constantly until melted. Add pepper to taste.

Cool the sauce to thicken.
