Changed carrots from shredded to diced

Ingredients

  • 1 c rolled oats
  • 1 tbsp avocado oil
  • 1 yellow onion
  • 1/2 c carrots diced
  • 4 garlic cloves halved
  • 15 oz black beans drained and rinsed
  • 1/2 c fresh parsley stemmed
  • 1/2 c toasted sunflower seeds
  • 1/4 c sun-dried tomatoes drained and chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 3/4 tsp sea salt
  • 1/4 tsp black pepper
  • 2 avocado sliced
  • 1 tomato sliced
  • 1 c sprouts or microgreens
  • 6 burger buns toasted

Instructions

Pulse oats in food processor until coarsely chopped. Set aside.

Heat 1T oil in a skillet. Add onion and carrots. Cook for 10 minutes, until softened. Add garlic and cook for 30 seconds.

Transfer onion mix to food processor with oats. Add beans and remaining ingredients. Pulse until everything is chopped and holds together but isn't pureed.

Line a baking sheet with parchment. Form 6 patties about 4 inches in diameter and 0.5 inch thick. Cover patties and refrigerate until firm.

Heat oil in skillet on medium-high heat. Place patties in pan. Cook for 5 minutes then flip. Cook for an additional 10 minutes or until golden and crispy on the edges.

Serve on buns with avocado, tomato, and sprouts.
