Ingredients
- 1 c. quinoa
- 1 and 1/2 c. liquid (water, veg stock)
- oil
- salt

Rinse quinoa in several changes of water
Soak 15 minutes in water
Drain well.
Heat oil, saute quinoa until toasty and brown
Add liquid, which will boil immediately. Reduce heat to low. Cover and steam 15 to 20 mins til water is absorbed. 5. Alternatively: toasting step can be omitted: after draining quinoa, put in a pot with liquid and salt,bring to a boil. Reduce heat to low. Cover and steam 15 to 20 mins til water is absorbed.
Turn off heat. Fluff with fork, let sit 5 more minutes covered off heat.
Turn out onto sheet pan in thin layer to cool down quickly
