Quinoa with Fresh Cranberry (Whole Foods)

- 1 c quinoa
- 4 tbsp honey divided
- 1 tbsp lemongrass finely chopped
- 1 clove garlic finely chopped
- 1 1/2 tsp serrano peppers seeded and very finely chopped
- 1 1/2 c whole cranberries
- 4 tbsp fresh lime juice
- 1 tbsp finely chopped fresh mint
- 1 tbsp finely chopped fresh cilantro
- 1/4 medium red onion finely chopped
- 1/2 tsp coarse sea salt

Rinse quinoa several times. Bring 2 cups of water and quinoa to a boil over medium heat and simmer until all of the liquid has absorbed, about 20 minutes. Meanwhile, combine 2 tablespoons honey, lemongrass, garlic and peppers in a small bowl. When quinoa is cooked, stir in honey mixture.

In a food processor or blender, combine the cranberries, remaining 2 tablespoons honey and lime juice and pulse several times until the cranberries are roughly chopped. Transfer to the bowl with the quinoa, and add mint, cilantro, onion and salt. Toss to combine and refrigerate until ready to serve.
