Ingredients
- 1 head cauliflower
 - 1 c onion chopped
 - 2 tbsp ginger minced
 - 2 tbsp red Thai curry paste
 - 1 1/2 c vegetable broth
 - 1/2 c coconut milk
 - 1/4 c fresh basil finely chopped
 - 1 Salt and pepper to taste
 
Instructions

Cut cauliflower into large florets.

In the slow cooker combine the cauliflower, onion and ginger.

In a small bowl, whisk the broth and curry paste together; pour over the vegetables in the slow cooker.

Cook on high for 2 hours and 30 minutes.

Once cooked, mix in coconut milk and sprinkle with fresh basil.
